Green beans or unroasted coffee has a shelf life of a year or more. Ensure you store them in a cool dry location. They don’t need airtight storage just ensure you keep out any pests. Most vendors store their coffee beans in burlap bags. Don’t refrigerate or freeze your green beans.
Whole Bean Roasted Coffee can be consumed up to 30 days after roasting. The peak flavour is generally achieved up to 15 days after roasting. After this time the coffee will begin to deteriorate. To ensure the maximum shelf life from your roasted coffee you should store your coffee in a cool, dark, oxygen-less environment. Many factors cause the decline in flavour including the oxidation of oils and other compounds that may occur when exposed to atmospheric oxygen after roasting. This damages bean cell wall integrity and causes the evaporation of flavour-active volatile compounds.
Roasting coffee beans produces a significant amount of carbon dioxide gas (CO2). This CO2 preserves freshness to the extent that it excludes atmospheric oxygen. Carbon dioxide continues to leach from roasted coffee for a period of time after roasting. When you receive one of our bags of roasted coffee, you’ll notice that it’s bloated with carbon dioxide. This will help preserve your coffee in transit.
It is important to never freeze your roasted coffee, but it is okay to leave your sealed coffee bag in the vegetable cooler of your refrigerator. If you live in a humid climate, you may find oil weeping from your beans at a faster rate, so keeping them in the fridge or a cool part of your pantry will help to combat this problem. Coffee is porous therefore it can absorb flavours and moisture from your freezer or refrigerator. The absorbed moisture will deteriorate the oils and cell structure of your coffee. This will make your gourmet coffee beans taste like your freezer or refrigerator.
Coffee grounds will deteriorate far more quickly than whole roasted beans. This is due to the increased surface area of ground coffee. You will only be able to keep ground coffee fresh for around a day if stored in a proper airtight coffee bag. Exposed ground coffee will deteriorate within about half an hour.
It is for this reason that we recommend that you only grind coffee when you are going to brew yourself a cup.
